Whole Grain Waffles

Makes 10-12 waffles

Ingredients:

  • 2 eggs, separated
  • 1 ½ cups low fat or fat free milk (may need ¼ cup more if batter is too thick)
  • 2 cups of whole wheat pastry flour
  • ¼ cup ground flaxseed
  • 2 tablespoons wheat germ
  • 1 tablespoon plus 1 teaspoon baking powder
  • ¼ cup canola oil

Directions:

Beat egg whites until fluffy (whisk works fine).

Mix in all the other ingredients until just blended.

Use a ladel or cup and pour into heated waffle iron, spread evenly.

Waffles are down when steam slows down or are slightly golden brown.


Tips:

Spray with oil or butter spray in between waffles cooking helps to keep from sticking.

Cool waffles on a cooling rack, rather than a plate which leaves them soggy. Once cooled you can then transfer them into storage bags for great eating during the week.

To thaw place 1 or 2 in microwave for 20 seconds and then place in toaster oven (helps to keep from drying out).
