Happy High-Fiber Trail Mix

Makes 8 ¾ cup servings

Ingredients:

  • 1 cup low fat granola or homemade granola (see recipe below)
  • 4 cups mixed high fiber cereal-pick a few that you like (Kashi©, Barbara’s Shredded Spoonfuls®)
  • 1 cup dried raisins or cranberries
  • optional - ½ cup chopped nuts

Directions:

Mix all ingredients and place into an airtight container. This will keep for a few weeks.

Homemade Granola

Makes 10 cups

Ingredients:

  • 1 cup brown sugar
  • ½ cup water
  • 1 tablespoon vanilla extract
  • 8 cups rolled oats
  • 1 ½ cups chopped nuts (walnuts, pecans, almonds)

Directions:

Prepare 2 large baking sheets with parchment paper. Preheat oven to 275°F.

In a microwave proof bowl, combine brown sugar and water. Cook on high in microwave for approximately 5 minutes, until sugar is dissolved. Mix in vanilla and salt.

In a large bowl combine oats, nuts and brown sugar mixture, mixing until well coated.

Spread mixture on both sheets and bake for 45 minutes to 1 hour. Cool completely and store in an airtight container.
