Grilled Tuna with
 Teriyaki Glaze

Makes 4 servings

Ingredients:

  • ¼ cup light soy sauce
  • 3 tablespoons chicken broth
  • 1 tablespoon chopped fresh ginger
  • 3 chopped garlic cloves
  • 4 tuna steaks (about 5 ounces each)
  • 1 large mango, peeled and cut into long slices
  • 1 red bell pepper, quartered

Directions:

In a small bowl combine soy sauce, broth, ginger and garlic. Divide the mixture into 2 medium shallow bowls.

Place the tuna in one of bowls and the peppers and mango in the other. Coat tuna and vegetable/mango mixture. Cover and refrigerate for 15 minutes.

Pre heat a grill or grill pan to medium and then spray with cooking spray place the tuna, peppers and mango onto grill pan.

Use pepper marinade (throw out the tuna marinade) to continue basting and cook tuna for about 4 minutes on each side. Cook peppers and mango until desired doneness.
