Quinoa Salad
"Queen of the grains"

Makes four 1 cup servings

Ingredients:

  • ¾ cup vegetable or chicken stock (low sodium if possible)
  • ¾ cup water
  • ¾ cup quinoa, rinsed
  • ¼ cup shelled and chopped pistachios
  • ½ cup chopped green onions
  • ¼ cup chopped dried ginger or pineapple
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon minced fresh ginger or 1 ½ teaspoons ground ginger
  • 1 tablespoon light soy sauce
  • ½ tablespoon ground cumin
  • ¼ – ½ teaspoon crushed red pepper (suit to taste)

Directions:

Place a small sauce pan over medium heat, place quinoa into hot pan and toast for a minute or so. Add stock and water, bring to a boil. Reduce heat and simmer for 10-12 minutes (until liquid is absorbed).

In a small pan place pistachios and toast lightly (takes about 2 minutes and stir frequently). Transfer pistachios to a medium sized bowl; add cooked quinoa and the remaining ingredients. Toss gently and serve.
