Banana Flaxseed
Oat Muffins

Makes 12 servings

Ingredients:

  • Topping:
  • 1 Tbsp chopped almonds
  • 1 Tbsp light brown sugar
  • 1/8 cup ground flaxseed
  • Muffin mix:
  • 1 ¼ cup all purpose unbleached flour
  • ¾ cup old fashion oats
  • ½ cup ground flaxseed
  • 2/3 cup light brown sugar, packed
  • 2 ½ tsp baking powder
  • ¾ tsp ground cinnamon
  • ¾ tsp salt
  • ¼ tsp baking soda
  • 1 cup mashed overripe bananas (about 2 medium)
  • 1 cup buttermilk or skim milk
  • 1 large egg

Directions:

In a small cup mix the topping ingredients, set aside.

Heat oven to 425° F. Coat a 12-piece muffin tin or use muffin cups.

In a large bowl stir flour, oats, flaxseed, brown sugar, baking powder, cinnamon, salt and baking soda until well stirred, breaking up brown sugar lumps if necessary. In a small bowl whisk the milk and egg together. Add the mashed banana and stir thoroughly.

Add the whisked ingredients to the dry mixture and stir until everything is blended (try not to over stir).

Fill muffin cups either ¾ full or full (if ¾ full you may need a few extra muffin cups).

Top each muffin with ½ Tbsp of the topping mixture.

Bake 18 minutes or until a wooden pick inserted in centers comes out clean.
